Can you tell us a bit about the most memorable weddings you have ever hosted?
Since opening in 2010, Fairmont Pacific Rim has played host to spectacular and memorable weddings. From a bride and groom arriving in a horse-drawn carriage to fire dancers and aerialists, no request is too large. Recently with the launch of a dedicated kosher kitchen in addition to our events kitchen, we have had the pleasure of hosting two weddings with kosher food and beverage offerings, elegant over-the-top décor and live bands for entertainment.
Tell us about wedding trends in your line of work. What trends have been significant in 2019? What trends are you predicting will be significant for weddings in 2020? A trend we’ve begun to see more of is elevated floral arrangements. Florists are creating more elaborate arrangements hung from the ceiling, rather than placed on tables as centrepieces. These large-scale colourful pieces create an enchanting experience that envelops the space. Couples are also looking for new ways to wow their guests. We’re seeing more requests for specialized culinary offerings like interactive reception stations for pre-cocktail, such as a living wall installation serving champagne, or a mobile food-truck style pop-up serving late-night snacks.
What is your process when someone books Fairmont Pacific Rim for their wedding?
A dedicated Wedding Manager and a team of experts will guide the couple every step of the way through artful touches and personalized service. Guidance from our spirited experts in wine and creative beverage can design unique one-of-a-kind beverage installations, custom bottled cocktails, monogrammed barrel-aged libations, or an elevated craft cocktail program inspired by our multi-award-winning bars.
